Setting podcast as "unheard"

I subscribe to several podcasts. I just want to listen to most of them once, so I have iTunes set to delete them from the iPod once I've heard them. But one is French lessons, and I need to listen to these several times. Is there any way to mark these as unheard, so that either they aren't deleted or they're reloaded?

You can right click the episodes in iTunes and select mark as new or reset playcount to reset them however this only sticks till you listen to it again. I would suggest setting iTunes to only keep unplayed episodes and the iPod to keep all episodes. Then right click the podcast's entry or individual episodes in iTunes and select do not auto delete. You will need to do this for any new episodes that download. These episodes will remain on your iPod and iTunes will look after the others. It will delete the played episodes of the others from the iPod on a sync after iTunes removes them from it's library.
