When I plug in my iPod touch into my laptop and iTunes shows an update for it this downloads then go to install but comes up with an error message showing (I think) Error 400 then won't install. If I then update the iPod over wifi this will download/install with no problems so what is the problem with iTunes then?

I found in my case a low quality cable can cause this to happen. One of my iPhones had this same issue, and once I moved it to a better cable, it started working properly again.

Also if you downloaded the update over WiFi, then there is no need to perform the update with iTunes.

Very true it's just when I "plug it in" to add/remove music from it I get messages about updates. I'll just ignore these and do it over wifi from now on.
The cable I'm using is the one that came with it so it's possible at fault but I have no trouble when adding/removing stuff??

Yes, I was seeing this too. I could sync over the cable but not do updates. My guess is partial damage to the cable is reducing throughput to the point that these multi-GB updates time out.
