I have a spare monitor (17-inch LCD from Dell) that has DVI and the D-Sub inputs. Does anyone know of a converter or cable that would allow using either of the video cables from Apple to connect the iPhone to the Monitor? What about some other cable/connector?

You can always try something like this

http://cgi.ebay.com/DVI-To-3-RCA-Component-YPrPb-Video-Adapter-For-PC-HDTV_W0QQitemZ230224521495QQihZ013QQcategoryZ61395QQssPageNameZWDVWQQrdZ1QQcmdZViewItem

You have to use the new apple cables to get video to output out of the Iphone and classic, unless you can find older dock with an Svideo out that will work as well.

Then use this adapter to convert the component to DVI of course you have to plug the sound in somewhere else.

Its worth a shot its really cheap and if it doesnt work you dont lose much.

From what I've read that particular one won't work because it is designed to go from DVI to component only, not the other way (like the Apple cables would require).

Of course, the information I can find is confusing enough anyway, so it could easily be incorrect. I found this yesterday too, and am thinking of trying it (though it seems like it would be the same way as the adapter you linked):
