I once knew how to do this, but after having not done it in 10 or 12 years, I can't seem to crack the code. My device is running fine, and iTunes detects it through Windows no problem. I ripped a couple discs to iTunes but can't get the files to my device. I also seem to remember when ripping a disc, in Advanced I would be asked if I wanted the files to go to computer hard drive or to iPod, which was my preference...but I can't quite seem to get there...

The simple answer is you don't. You can't rip tracks directly from the iPod to CDs.

You can transfer the songs from the iPod to iTunes which has been posted several times. Here is a more recent version. https://forums.ilounge.com/threads/new-unwanted-version-of-itunes.288434/post-1457881

Once you have cleaned up the tracks with no information and find the ones you want, then you can create a Playlist and burn that to CD.
That is also posted several times, here is a recent version: https://forums.ilounge.com/threads/making-a-compilation.287413/post-1454802
