Whereabouts on my hard drive can I find my podcast files? I'd like to convert them and watch on my PSP, seeing as how I don't own a video iPod.

They are stored in a folder named Podcasts in your iTunes Music folder. An easy way to find them from iTunes is to right click an episode and click on "Show In Explorer".

Can I change this folder? iTunes create two different folders where podcasts store.. \Podcasts\... and
\Downloads\Podcasts\.... Could somehow make one folder for all my podcasts? |

No, you could change the location of the iTunes Music folder but not the folders in it. The \Downloads\Podcasts\ is a temporary folder iTunes downloads the podcasts to, once they're downloaded iTunes moves them to the Podcast folder. Sometimes iTunes will leave some extra files in the \Downloads\Podcasts\, I just delete them once in a while.

I would say there is a problem with iTunes, try re-installing iTunes.

Imagine if, instead of spending a week’s grocery dollars to take your family out to eat at a nice restaurant, you get to treat your loved ones with great meals night after night? You will become your family’s own master chef and also save time and money. Your family and friends will be impressed by the taste and quality of the meals made from recipes which duplicate the kind of favorite meals from famous popular restaurants
