There are the iPodlounge 101 articles,

they have a lot of useful info.

iTunes itself has a help menu, Help/ iTunes and music store help, which seems to be ignored a lot of the time.

With iTunes open you can hit ? or help on the keyboard and a help screen will come up with FAQs.
