How can I move the chapters of a book from ITunes to my IPod so they appear in the proper order for playback?

First off make sure they are tagged correctly. Track x of y and Disc X of Y
Then you can use smart playlists: Sync audiobook position between devices?

Well you would find the same method described by many in different ways. Instead of reading those methods and then try it yourself, just find out some video on you tube. Watch it carefully and then try it yourself. I am sure, within a few minutes, you will get your problem solved.
