Unplug the iPod touch from the computer, plug in your headphones and play the music.

The bulk of my video library sits on an external drive at home. One trick I do when I'm on the road is to temporarily switch my iPod to manually sync music and video. All the content on it will remain as is on the iPod and can be selected on the iPod for playback on the computer larger screen in iTunes, video in my case. When I'm done I will remove the check for manual syncing and the playcounts will sync back to iTunes keeping my video history intact. When I get back home and connect back up to my external drive the new unwatched videos will be synced to my iPod again. It works quite well for me.

Do not use this as a reason to delete your content off the computers drive. An iPod is a bad place to keep your only copy of any file. Only use this method if you have a good back up of your media files since one wrong click can erase the iPod.
