Actually, it's click-wait-click. Double-click will open the iPod screen in another window.

The iPod name appears in two places and (for me anyway) they need to be edited separately. The name that shows up in the iPod Summary tab in iTunes can be changed by clicking on the iPod in the source column to highlight it. Wait a second, then click it again, and you can edit the name.

The name displayed on the iPod itself when you view Settings->About is the "volume name" (like when you name your hard drive or a floppy disk) which can be changed from Windows Explorer, but you have to turn Disk Mode on ("Enable disk use" from the iPod Summary tab). Find the drive which represents the iPod, and change the name there just like you did in iTunes: click-wait-click.
