Absolutely, and if you search through the forums you'll find many answers to this question.
With the exception of iTunes-Store-purchased music in iTunes 7, iTunes itself will not do this for you. There are a number of third-party tools available that you can find in our Software Downloads section, or you can just access the iPod in "Disk Mode" (ie, as a drive through Windows Explorer), and find the hidden \iPod_Control\Music directory that contains all of your music files. They won't be organized in any meaningful file/folder structure on the iPod, but the internal tags are all intact and can therefore be sorted out by re-importing them into iTunes (which will reorganize the file structure based on internal tags). I'd suggest that you start by checking out our iPod 201 article, Copying Music from iPod to Computer and the thread How to Copy songs from your iPod to your hard drive. The only issue you might have if you're going from a Mac to a PC is that a Mac-formatted iPod cannot be read on a PC without the use of additional software such a MacDrive.
