The FBI turn up and arrest you for illegally cracking your hardware.


But no...seriously. You simply bypass the "walled garden" that Apple have created within the iOS environment and allow the iPhone/iPod to access content from other sources.
It has its potential pitfalls - there are apps that may not work, or you may brick your device, but there are literally hundreds of thousands of people that jailbreak their iDevices and have little or no problem.

Personally, I don't have a jailbroken device as I use it for work email and the app I use for that does not operate on a jailbroken device.
My old iPhone was jailbroken for a while and to be honest, I didn't get nearly as much out of the jailbreak community as I thought I would, so have never really thought about it since.
