I have a secondhand 5th gen. Classic that didn't come with a manual (I'm assuming they originally had them). A few things have confused me, but the one I'm having the most trouble figuring out is this: when I haven't used it in a day or so, every now and again, out of the blue, it'll play a little musical thing of 8 notes -- "do-DOO do-DOO do-DOO do-DOO" and the screen will activate. The screen doesn't tell me anything useful, and the iPod is in "sleep" mode. So what is it trying to tell me, and how can I disable this annoying trait?

I've never heard of a 5G/5.5G iPod doing that. I have had my 5G iPod since 2005 and it has never made that type of tone. Is your iPod running custom firmware such as Rockbox? Try restoring your iPod with iTunes. This will erase absolutely everything on it but is the easiest and fastest way to try and fix whatever is wrong with it.
