Hi and welcome to iLounge.

Are these audiobooks you've downloaded from iTunes or Audible? If so, they will show up under the separate "Audiobooks" section in iTunes 7. If you're not seeing an Audiobooks section (it should be in the same list as "Music", "Movies", "TV Shows", etc), then go into your iTunes preferences and ensure that it's selected for display under general preferences.

Once you can find the audiobooks themselves, then you simply need to remove them from your iTunes library (if you're using automatic sync), or remove them directly from the iPod itself (if you're manually managing your iPod content).

Or you can do what I do. If you're using auto-sync on your iPod, just set it to only sync checked items and then you can uncheck audiobooks in iTunes you don't want on your iPod.
