Did you try right clicking and changing by clicking, "get info"? That's how I always change mine. If there's a problem past that, I don't know how to help.

are you clicking your ipod or the itunes library? I've only seen songs greyed out on the ipod library in itunes. Also, make sure you have write access to the drive that the music files actually live on.

....and that the files themselves aren't marked "read-only" for some reason.

You can check the files by right-clicking on one of the tracks in iTunes and selecting "Show Song File." Assuming you're using Windows, this will open the song file in a "Windows Explorer" view.

You can then right-click on the song file and choose "Properties" which will allow you to modify the attributes. DEselect "Read Only" if you see it selected.

if you are dragging files directly from a CD then they sometimes keep the read only attribute
