How do I set iTunes to 'Manual-Sync' ?

Once you plug your ipod into your itunes, you'll see your ipod on the left hand side menu. Right click on your ipod go to properties.

Done.

By the way, the search function works very well for this forum

What you are setting to manual is the iPod. With the iPod connected go to Edit>Preferences>iPod and select 'manually manage songs & playlists'. You can also right click on the iPod in the source list & select iPod Options to access the menus.
