You just have to manually manage your ipod by right clicking on your ipod in the source list, then click on preferences-> manually manage songs and playlists. Then, you can delete songs off of your ipod, or drag and drop them onto it.

While your Ipod is connected to your I-tunes. Go to Preferences and click Manual like they said. That's the best way to manage your playlist!
