A prime example of why a backup of your PC's iTunes library is critical.
Be sure to authorize the new laptop with the same iTunes account(s) the iPhone(s) use. You'll need some software to get the music from your old iPhone here is a list (Copying Content from your iPod to your Computer - The Definitive Guide | iLounge Article) If you do this with your new Laptop that should get your music into your new iTunes. Then sync your new phone, selecting the music you want. Photos, you should be able to get off the usual way (connect the iPhone and access the photos like a USB drive) and put them on your PC. Then tell iTunes to sync the folder you put them in on your PC with your new phone.
