How do I get Gmail's "Chats" (chat history mail folder) to appear in the iPhone mail app?

You can't, but there is a separate GMail App (but not sure if that includes chats).

But the GMail app is not so good. My daughter likes it so I looked at it. The drawback I have with it is that it only allows a single account. I have a couple that I use. But to look at the other accounts I use, other than my main one, I have log out, change the config, and log in. Then to go back to my main account, the one I usually use, I have to go through the process again. At least doing it on the web allows you to use multiple accounts.

The native iOS Mail app will handle multiple GMail accounts simultaneously, no need to go to the web for that. Just set them up individually, with different account names.
