In my add/remove software on windows xp, there are a bunch of older iPod updates still there, my question is, can I remove all the older ones, and just keep the most current verison on my computer.

Try it and see if it will have any effect. It might since the updater has drivers that the iPod uses and they might be uninstalled with it. If you have any problems then download & install the current one again and the needed files will be reinstalled.
