Right now I have a iRiver H320 "which I hate" and I just plug it in and I can just drag and drop files but I know with an iPod you have to use iTunes and I was wondering if it puts the music on the iPod the way it is aranged in the folder or but makes differnet folders for artists and stuff.

it renames the mp3 files and puts them in folders that the ipod software understands.
this, I believe, is to keep you from dragging and dropping files onto another computer with the intent to illegally share files. which is silly because you can download apps to do this quite easily anyway

First off, you can manually drag and drop files to iPod from iTunes. Or, you can sync iTunes with iPod...this way your iPod will basically look like a mirror image of your iTunes folder. You can arrange files (through tagging) many different ways in iTunes.

Firstly, you can create playlists in iTunes which will be copied to your iPod either manually or using auto-sync. These will then appear in the Playlists option on your iPod.
You can also just transfer all the songs to your iPod and they will be arranged into these folders: Artists, Albums, Songs, Genres, Composers, Audiobooks, using the ID3 tags you've made for each song in iTunes.
When you go to the Artists folder on your iPod you will be presented with all the names of all the artists on your iPod. If you click on one then you'll be presented with all that artist's albums. And if you click on one of those you'll be presented with all the album's songs.
When you go to the Albums folder on your iPod you will be presented with all the names of the albums on your iPod. If you click on one then you'll be presented with all the songs in that album.
When you go to the Genres folder on your iPod you will be presented with all the genres that you have on your iPod. If you click on one then you will be presented with all the artists belonging to that genre, and if you click on one of those then you will be shown all that artist's albums. Then if you click on one of those then you will see all the songs in that album.
When you go to the Songs folder on your iPod you will be presented with all the songs on your iPod, and the same will happen when you go to the Audiobooks folder.
The whole system is extremely efficient and easy to use. Hope this answers your question.

welcome to the lounge :)
you don't have to use iTunes to manage your music onto your iPod....

If you just want all the songs under the artist without them being in individual album folders on your iPod, you can do a 'select all' on an artist in iTunes and simply delete the album title(s)...this way when you sync to iPod all of the songs will play in one list rather than by album but, also keep in mind that when you look at a particular artist on your iPod you will not only see all of their album titles but you will also see an option for 'all' which will play all of the music under that particular artist rather than just a specific album. Make sense?
One of the things I do when I have an artist with say, 5 albums with only a couple of good songs on each album, is I'll rip only the songs I like and then I'll create a new album title in iTunes making essentialy my own 'best of' album for the iPod.
Hope this helps.
