Just got my 30GB Photo, and don’t want to let it get into the scratched state my 20GB 3G got from just being lugged around in my pocket. I’d be inclined to go for an iSkin, but I really want something I don’t want to have to take off when I dock (I’m using my 20GB 3G dock for the Photo). Are there any skin-style cases that have a bit you can “open” at the bottom so the iPod still fits in its dock?

I think there is a speck one that you can dock with and it is like the iskin only it doesn't have the belt clip or screen protector. If you go to the top of this board under "gear guide" and check reviews it will give a description of the case and many others.

NightFox, the Speck Products (http://ipodlounge.com/reviews_more.php?id=5164_0_6_0_M) and the Lajo (http://ipodlounge.com/reviews_more.php?id=5652_0_6_0_M) cases appear to be the only 'skin-type' cases that you can flip up the bottom for use with the dock stand. Cheers.

there is a skin where the bottom part of it flips open so you can dock it. its made by lajo at www.lajo.biz i have one of the skins, it is nice, but be warned that with the lajo skins you tend to attract a lot of dust onto the skin, which is primarily why i dont use mine all that often. i prefer my iskin over it. if you want easy docking though then i'd go with contour design showcase, it is extremely easy and quick to take the ipod in and out of to put it onto the dock, it does add quite a bit of bulk to your ipod.
