difference using earphones on iPod vs. other HiFi

I'm try to understand if they are a difference using earphones on iPod vs. other HiFi. In fact I get a low level if I use HD560 on iPod.

If you have a in-ear like Shure e3, does it work seamless on iPod and on normal HiFi Amplifier ? (same volume)?

It depends entirely on the phone. A phone can have a wide range of efficiencies and impedances. These are 'loads' that the phones impose on the headphone amp of anything that you have them connected to. Portable equipment do not have the power of fixed equipment, and as a result need more efficient phones. The Shure E3c is one of the most efficient on the market.
