Is it better to unmount when the IPod is on the docking station if you are not transferring any info? Does the hard drive spin constantly until it is unmounted?

That's what I've heard, yeah.
I do it anyway, cause I like the large charging icon better than the giant Don't Disconnect sign ;-)

i'm using a PC and I dont think it is spinning while mounted. Is that possible?

The disc spins constantly while its plugged into the USB port, doesn't matter if its mounted or not.
Enable the equalizer and try and play a song or scroll through your song list while its plugged in and the scrolling is slow and jerky and the song skips and jumps. It also drains the battery really really quickly if its not plugged into the mains at the same time.

Seems a bit odd and kind of renders the dock a bit useless if you can't leave the pod in it. I always leave my pod in the dock, plugged into the computer but unmounted all the time I am not using it. I wouldn't like to think I am doing it harm. I use firewire.

Its not going to do it any harm. The hard disk in your computer spins all the time without breaking. It will just take longer to charge (or flatten the battery if its connected with USB and the other end is not plugged into the wall).
