Archos-style transferring?

I'm a relatively new iPod user. I used to have the Archos Jukebox 20 but it was full of bugs and eventually busted. I really liked the way i was able to just create folders for genres, artists, albums, and whatnot on the Archos mp3 player. Is there anyway way i can transfer my music on to the iPod that way? If not, is there any way to do sub-genres and stuff like that using iTunes? Thanks.

I suggest making playlists that can have small groups of music easily accessible for you. There really isn't any ability to do subgenres in iTunes, though they have a new grouping feature, but this feature is not yet supported on the iPod as of now.
