If the earbuds that come with my 3GS (set to be fedexed to me soon) are the same quality as previous iPod pack-ins, I'll definitely want to be getting a better pair. I'm looking for something with the kind of inline controls and microphone that the pack-in buds have, but I want something that lets me hear a little more environmental noise when I'm out jogging or working out than Apple's sound-isolating in-ear buds (the $80 is a little steep, too).
What's a good pair of earphones that have better sound quality than Apple's pack-ins with a fully-functional mic and in-line controls for iPhone?

AFAIK, they are the only ones that are guaranteed to be 100% compatible.

I'm noticing a lot of pairs of earbuds with an inline mic and button to accept calls, but they seem to be leaving out either the track forward/back buttons or volume control, which I definitely want.
How exactly does taking a call while listening to music work if I'm using headphones without a mic and controls? I'm assuming I hear the ringtone through the headphones; can I simply put the earphones around my neck and bring the phone to my ear, or do I have to unplug the earphones first? 'Cus that would be kind of annoying, having to unplug my earphones every time I need to accept a call while listening to music...

There is only one button required to answer calls. The original iPhone shipped with a one-button headset.

You do have to unplug the earphones first. And the in-ear earphones do not work with anything but the iPhone 3GS and the Touch. The 3.0 software did not make them functional with older iPhones. Seems awfully silly to me, but that's the way it is.

Apple in-ear would be ok... if they costed $30.
There is a nice choice of good quality earphones for $30-80 with mic/button (no volume control on any of them for now), check the Ultimate Ears vi line (the 170/220 are quite good0, the combo Shure se110 + iphone remote, V moda duo (but some quality issues)....
You can find some cheapo headset iphone compatible (griffin, skullcandy..), if you think that the default apple earbuds are already good enough... (I heard some people saying that :confused: )

I personally use some Shure SE530 earphones with the Shure MPA-3C iPhone cable that includes the microphone & remote button.
Because it was designed for use with iPhone/iPhone 3G, it doesn't have the volume controls, but pause/play/FFW/RRW answer call etc. all work.
Can use other earphones with the remote.

I had the Apple in-ear with remote and they are pretty good for the money.
Also,
I've used some BT headphones (SE DS980) which work fine for volume play/pause but until Apple ad proper bluetooth profile the FFW/RWD don't work. Hoping that will be added in the next firmware.

I just picked up the Monster iSoniTalk ($15 at Best Buy) to use with my 3G iPod touch, and it's been great. You just plug in any set of regular earbuds, and the Monster adapter provides a mic and call button. Having a Touch instead of an iPhone, I've only used it with Skype and Voice Control so far, but it works perfectly as advertised. Looks like the iLounge editors liked it even better than more expensive solutions from Griffin and Shure, too:
