Revert back to 1.1.5 from 2.2.1

I've delayed upgrading from 1.1.5 to 2.2.1 due to the many problems I've read that iTouch users have had with 2.2.1. If I were to take the risk and upgrade to 2.2.1 and it proved to be a disaster could I revert my iTouch back to 1.1.5? If so how do you do it. I have an iMac G5.
