I'm creating this thread primarily for anyone who is Googling for a wired behind-the-neck iPod Touch compatible stereo headset because I hate the earbud style and I know I can't be the only one :D

SOLUTION:
Headset: Sennheiser MM30 Stereo Headset (http://www.amazon.com/Sennheiser-Stereo-Headset-Mobile-Phones/dp/B000EFIFJY)
Adapter: Stereo Headset Adapter (http://www.amazon.com/Blackberry-Stereo-Headset-Adaptor-HDW-15306-002/dp/B0010VLYJE)

It will allow you to listen to music in stereo as well as make calls with fring (www.fring.com) using the in-line microphone.

Just tested it out...works perfectly :)

*There are a few companies that make microphone adapters which allow you to connect your favorite headphones to a mic cable, which connects to the iPod touch, but they add 2+ feet of cable...not very efficient IMHO
