These are some of my favorite:
AP Mobile News (newest headlines, very useful), i.TV (check out movie trailers over 3G/movie times), Shazam (ID that tune you hear on the radio or in a restaurant), WeatherBug (nice weather app), Wikipanion (for quick research), Pandora (for high-quality music streaming over 3G), Graffitio (to check out what other people post, location-based).

First, earphones. Seriously. This is my number one top accessory that I don't have.
Number 2 is a damn car jack. I want to get one badly but they just seem way too expensive for my taste. It's just a jack, and it costs $100?!
As for apps, well I can tell you my favorites :D
Edge. By a landslide, this is the best game on the iPhone. The best I've played anyway, and I've tried a lot. It's $5 or $6, but totally worth it, I just love it. Usually after I'm done with a game, I delete it off my iPhone to save space, but I kept Edge because it's just that good. It's the only game I've completed that I still have on my iPhone.
Air Sharing. A lifesaver for files. Replaced my USB. Or it would, only not everyone has wireless here, yet. But it's replaced it for the most part, plus I get to view files on my iPhone.
Remote: A great little Apple app. Controlling iTunes from my bed :D
Shazam: I don't have any data on my iPhone, so Shazam is better than midomi for me since it can save the sample until I get home and send it over Wi-Fi. (This app recognizes music just by recording a sample of the song). That way I'll always know what song is on the radio. I generally prefer midomi's interface and features, though.
Ocarina: Cute. Not too useful though.
Fake-a-call: Haven't been in a situation where I've had to use it yet, but it'll be a lifesaver when I do. Just a double tap, and you're talking to your uncle from France :D "Could you hold that thought while I answer my phone, hun? I'd also appreciate it if you stop shouting while I'm away. Hello uncle :D"
Evernote: Note taking, I use it for voice and recording some guitar samples before I forget them.
Photogene: for editing photos on the go. Can be pretty useful, but I've never needed to edit a photo directly. I can always just wait til I get to my PC.
Back to games: Lux DLX. While it needs some speed improvements and extra fixes, it's still a great app, plus those fixes are coming with updates. If you like Risk, this's a great app. Galcon is similar, and it's really good as well.
Bejeweled 2: I just like Bejeweled. Sue me.
Aurora Feint: An even better version of Bejeweled, but I got bored of it and deleted it, while Bejeweled is still on my iPhone.
Labyrinth. Try the lite edition first though, you might not even want the full version.
TanZen: If you like puzzle games, this'll keep you occupied for a while. Plus it's just $1.
Enigmo: Another great little puzzle game. Deleted it after I finished, though.
Bonsai Blast: Zuma game. I like it.
Tap Tap Revenge: It's just plain fun, even though I try to hide the fact that I like it from friends and such :D
Who wants to be a Millionaire? Self-explanatory. I've yet to get past $50,000
Monopoly: Never been a serious Monopoly player, but it's really fun.
TouchGrind: Keeps you occupied for a while. I still have it because I'll always want to beat my previous high score.
Platinum Sudoku: Best Sudoku version. Get it if you like Sudoku.
Asphalt 4 & Hero of Sparta: Racing and action game, respectively, both from Gameloft. Not very long lasting, but they're worth trying just to see the quality, which is some of the best on the AppStore.
DropShip & Maze Finger: Great games with retro graphics, both from ngmoco. After these two, I want to try Rolando (also from ngmoco). I will soon.
They're a lot, I know, but I wish someone would have told me this stuff before I got my iPhone, so there you go. Congrats (in advance) on the purchase. :)

I can't speak highly enough of the Just Mobile Gum Pro Battery Pack. There is a nice review of it here on the site. I just received mine a couple of days ago. It was packaged well and had a good solid feel to it. After an overnight charge, I decided to try it out. I did everything I could to run my 3G iPhone down to 9-10% battery level and plugged it into the power pack to charge. Took about 90 minutes to charge it back to 100%. When it was done, the USB Battery Pack was still showing 2/3 full. So I repeated the process. Ran the iPhone battery down to 8% this time and plugged it in to the Just Mobile to charge. During the charge, the battery level indicator dropped down to 1/3 full then fluctuated between 1/3 and 2/3 full. After the full 90 minutes, the iPhone was back up to 100% and the USB Power Pack was showing a solid 2/3 full again. I think it is *barely* 2/3 full, but still that is super impressive. I fully expect to get 3 or 4 total charges out of it. I've already started recommending this thing to family and friends. My mobile life just got a lot easier thanks to Just Mobile.
On the application front, I love Pandora (as others have mentioned), Field Runners and Bejeweled 2 for entertainment. EasyWriter and SuperDial are probably my two favorite utilities. As far as productivity stuff, SplashID and SplashMoney are at the top of my list.

If you like Edge, which is too expensive for just 26 levels as far as I am concerned, you might want to check out CubicMan Deluxe. CubicMan is a conversion of Bloxorz, the old Flash game. It has 100 levels for $2.99 (dropped from $4.99). A light/free version will let you play with 10 of them.

Well, Edge had some very spectacular level designs, and awesome music. If I had to find something wrong with it, it wouldn't be the amount of levels, it would be the controls - they need a bit more tweaking - I hate it when I have to move just one block, they make it difficult.
While I haven't yet tried CubicMan (I'll be sure to check it out, along with a few other apps in this thread), I prefer quality over quantity. 100 levels is a bit much for me. I actually like to finish games, rather than get bored of them before I reach the 40th level.
Plus, I don't buy the apps myself, so price isn't an issue.
