Quoted from jhollington in another thread:
Cables that go into the headphone jack will not work with any iPod other than the fifth-generation iPod. Since you're posting this in the "iPod touch" forum, I'm assuming that you have an iPod touch.

Further, most cables that connect to the Dock Connector will not work either, since a specific authentication chip is required in the cable to enable the video out capabilities on the device. Many cables made for the fifth-generation iPod to pass video from the Dock Connector port will therefore not work with the newer 2007 iPod models either.

Your options right now are pretty much limited to the Apple Composite AV Cable or Apple Component AV Cable cable in terms of direct cable connections. You can also look at the older 2005 Apple Universal Dock, which will work fine as long as you're using firmware v1.1.3 or later on the iPod touch. This particular dock has an S-Video output for video and a line-out jack that can either be used for audio only (with a standard mini-jack to RCA stereo cable), or for audio and video by using a three-lead mini-jack to RCA cable similar to those found with most camcorders (and similar to those cables that connect to the headphone jack on the 5G iPod such as the ones you're seeing on eBay).
