I just uploaded 14,000 pics from iphoto to my touch, and it just has them on there on one scroll. Any way to separate by galleries?

Make Photo Albums in iPhoto and they will transfer to the iPod.

Or on a PC you can separate photos into folders (then select each folder in iTunes for sync).
It will still have one big album as default, but the folders will be "albums" in the iTouch.

I have 235 galleries in iPhoto! Still transfered them on one scroll.

What do you mean by Galleries? There is no Galleries in my iPhoto '08, there are Events but these do not transfer to the iPod which would be nice. The Photos will only be dumped into the Photo Library on the iPod with the addition of "Last 12 Months" and "Last Import" which are kind of Smart Photo Albums. If you want to organize the photos on the iPod you will need to make Albums just like you need to make playlists for music in iTunes. If you want the photos divided up into the Events they are sorted in iPhoto you will need to make a Photo Album for each Event. Albums can be made by simply selecting Photos under Library, make sure View/Event Titles is checked and drag and dropping the icon beside the event name into the albums section on the left side. Use folders to keep iPhoto clean, however the folders will not transfer to the iPod with the Albums.
I'm hoping Apple will soon update the Photo apps on iPods to support Events as well as the new features Faces and Places announced in iPhoto '09.

Events, galleries, same thing I guess. But even so, last 12 months is about 3,500 images so sorting through even that many is a Pain in the ###! Plus, is there any way to make the thumbnails bigger? Some of us don't have 20/15 vision.
