I've seen it done on YouTube.... it isn't pretty but it is possible. Could the mic on the new Apple In-Ear buds make it a more realistic option?

As an cellular phone like an iPhone, not possible. As a VoIP phone using WiFI, totally possible.

Would the mic with those headphones work for that?

Yes it will work. By the way there is a much cheaper excellent Griffin alternative Smarttalk (http://www.griffintechnology.com/products/smarttalk), which you plug your present headphones into.

There's a free app called Truphone. You can call for free any Touch or iPhone that is also running it.

You should also be able to use Apple's $29.95 iPhone earbuds which have the microphone on them. I am using them with the app SpeakEasy voice recorder, and they are great for that. I have a 2nd gen Touch.
