How do I change email accounts?

I have a gmail account set up on my iphone but I wanted to change it to a different gmail account. How do I do this?

Settings > Mail > Choose your Gmail account. From here you can edit the settings to the account you'd rather use. Alternatively, you could just delete the existing account from this screen and recreate the correct one.
