Read through Copying Content from your iPod to your Computer - The Definitive Guide (http://www.ilounge.com/index.php/articles/comments/copying-music-from-ipod-to-computer/) which is found in the Articles - iPod 101/201 link in the top menu here. You will need to recover the files as described in the article then Restore the touch using iTunes.
As you have just found out the iPod is not a good place to keep your only copy of any media. You should have multiple backups using external hard drives and/or CD/DVDs.

Reboot.
A few times lately I've docked my Touch and my 5.5G video iPod and have been told that the iPod is corrupt and needs to be restored. I disconnected, rebooted and redocked and everything works fine. Not sure what's going on. This never happened before i upgraded to iTunes 8.
You might want to give that a try. It's quicker that restoring.
