I've not noticed anyone else mention this anywhere so I figure I'll contribute the following trick I use.
The following applies to the iPhone (both original and 3G) and I suppose it would work with the Touch too but haven't tried.
Also, I have the Volvo OEM adapter (older one from PhatBox, fwiw, but this should work with any adaptor).
When you plug it in to the car, on many adaptor models, you lose all 'manual' control over the music player. You get a white screen that tells you to that there is an accessory connected. If you'd prefer to control the player via the phone/pod itself instead all you have to do is hold down the 'home' button for about 10 seconds while you're in the music player app. This does a 'forced quit' of the app and, when it restarts, it sort of forgets that it has an external accessory connected.
I do this sometimes because I want a little finer grain over the control, like podcast playback or I want to see who an artist is or what the song is that is playing. But- be safe...
