Is there anyway to put movies onto my iphone and then delete then delete them off my computer. I do this and the next time I sync the phone the movie gets deleted too. This whole syncing thing is really frustrating.

Yes, delete it off your phone, then in iTunes, look at the library section (top left), and click movies, then delete it from there too.
If you dont want to delete it from there, then, again in iTunes, click on your phone, and under the 'video' blade (top right), untick the movie.

sorry i think i made it confusing. I want to keep the movie on the phone but delete it from my computer after. When I do this, the next time I sync it, the movie is removed from my iphone

Set your iPhone to manually add movies and they stay on your iPhone until you delete them.
