Currently, I plug my iPod into my stereo through a 3.5mm cable. (http://www.hdaccessory.com/catalog/35mm6.jpg) Has anyone yet devised a wireless alternative in which the iPod becomes properly portable and you don't have unsightly wires trailing everywhere? The only google results I found where to hook your iPod up with your phone. There must surely be a simple transmitter and reciever arangment that plugs into the same 3.5mm ports and does nothing more than relay audio data as the cable would?

The product I use for wireless is called a tshirt, it conceals the wires perfectly.
Seriously though, are you looking for just wireless headphones? There are a few out there but I'm pretty sure they hook up to the usb port on the ipod and not the 3.5mm headphone port like you're talking about. For portables it's relatively new tech and you won't be finding anything with decent sound quality. They run on bluetooth which is the bottleneck for sq, it just can't send information fast enough and the signal needs to be reprocessed in the headphone itself after being sent over the air. When bluetooth becomes faster I hear it will start to get better. Right now the best sounding wireless portable you will get is the sennheiser kleer headphone but it's expensive.

man i wish they'd put bluetooth stereo in ipods. sony ericsson make this kind of clip on mic that recieves AD2P from music phones (stereo over BT) & has the 3.5mm socket for any head / earphones you like.
there is someone who makes an FM transmitter that connects to the ipod dock connector, possibly even a bluetooth thing somewhere (not sure though, is that just for remote control?)
have a look in this site at the accessories!!

Yeah there's bluetooth receivers out there. But the sq sucks right now for the price.

The Sony iPod Bluetooth system works pretty damn well for what you are talking about:
