Yes, you can use multiple iPods in one iTunes (my family has 4). You just have to determine how you want to sync. We use sync to specific playlists to make each iPod customized to the person using it. Check out the iLounge Articles (http://www.ilounge.com/index.php/articles/tutorials/) and check out iPod Connection and Synchronization (http://www.ilounge.com/index.php/articles/comments/ipod-connection-and-synchronization/) for ideas and help.
To rename an iPod, plug it into iTunes and let it sync. Then click on the name of the iPod in iTunes, and it should give you the ability to edit the name. Click off of the name it should update the iPod automatically. In case it doesn't just click on the sync button.

Along the same lines....I have a 4G with 18 GB of music and just purchased an 8 GB nano. I want to sync both to my iTunes. Can I sync the 4G automatically and the nano manually? One FAQ suggests I have to either sync both manually or have a different iTunes account for each one, which would result in duplicate songs on my hard drive.
My assumption, when the nano gets here , is that I just plug it in, give it a different name than my 4G, select manual music management, and manually transfer songs to the nano. If that is what I'm supposed to do, what happens when I plug in my 4G?

When you plug in your 4G iPod, iTunes will tell you that you have more music than will fit on your iPod and will ask if you want it to create a playlist to fill the iPod with.
If you answer Yes, iTunes will select 4 GB of music and put it in a playlist and tell your iPod to sync to that specific playlist.
If you answer No, nothing will be put onto your iPod.
If you read the iPod Connection and Synchronization (http://www.ilounge.com/index.php/articles/comments/ipod-connection-and-synchronization/) article it talks about methods to sync with. Choose your favorite.
I use nested smart playlists that Code Monkey put a guide together (http://filebox.vt.edu/users/channum/files/smartlist_management_v5.1.pdf) on to rotate through the entire music collection over time.

Sorry about the terminology mixup....I have a 4th generation iPod and an 8 GB Nano. There's plenty of room on the 4G iPod for all my music. My question is really:
can I sync the 4 G iPod standard automatically and the 8 GB Nano manually, using the same iTunes account? One of the FAQ's suggested that I had to sync both of them the same way, either manual or auto (with the auto-selected size limitation on the nano).

Yes. You can choose any method to sync any iPod. They don't have to be the same.
