I've been searching around and found some information for old iphones, or jailbroken ones, but is there any way to back up everything from my non-jailbroken 3g iphone? I want to back up all of the media, in addition to the settings. If I can just copy the files off, that would work too. I'm not currently on the PC that I normally sync with, and won't have access to it for about a week.

Without jailbreaking it, you're pretty much going to have to rely on iTunes to do a backup of your non-media content. You can backup your iPhone to any iTunes library you connect it to, and this will back up everything except for synced content (ie, your media files). Even photos you've taken on the iPHone are included in the backups, as well as third-party SDK apps and their settings.

Getting the actual media content off will require a third-party application like TouchCopy (Windows) or PhoneView (Mac). Both of these applications can access the iPhone's "Media" folder and copy any of the media off, but they won't back up any other settings -- you'll still need iTunes for that.
