Yes, any update to the iPhone firmware will wipe all your jailbroken apps. It probably won't brick your phone. Probably.

There is always the possibility that you could brick your phone. It doesn't happen often but it does happen (that is why I haven't ever unlocked mine). What you may want to do is restore your phone tonight or tomorrow before 2.0 comes out. You never know if there will be any check with 2.0 for a jailbroken phones and not allow an upgrade.
I just noticed that you are in the UK with an American iPhone. I would not upgrade until you are able to verify what you will be able to with your setup. Have you ever used iTunes to upgrade your iPhone or have you always used jailbreaking apps? If you haven't used iTunes before I would find out from another person what the implications are.
I can pretty well guarantee that in order to use the phone in the UK you will need to wait for a 2.0 jailbreak. You probably won't have to wait too long.
Apple's official policy on the matter is that any update could potentially break phones that have been modified. I would guess this is just to cover them in case it does happen (since they can't possibly test the updates with every single modification) and that they don't actively go out of their way to brick jailbroken iPhones. Therefore, it would be advisable to wipe your phone and restore it to a "factory fresh" condition before you install the update to reduce the possibility of problems arising.
One thing to note is that it will probably take the jailbreaking community a few days to finalise and release their mods for the new software, so it would be worth holding off from updating until a new version comes out. By that point, I would guess that there will be plenty of reports of whether or not you can do a straight upgrade or whether you have to restore your phone, update and then jailbreak it again.

thanks for your replies guys. I can say that no I have never used Itunes for updates. I didnt jailbreak/unlock the iphone myself, it even came with a piece of paper in the box saying never update through itunes or it may brick it..
I will wait for the jailbroken 2.0 and then I should be able to update and keep my apps? Is that correct? Its not the end of the world if i do lose them and have to start again, i just dont want to damage the iphone or reverse the unlocking to make it sim locked again.
