Hi, I am thinking of buying a new iPhone. What I am not certain of yet is what happens if my battery dies? Since it is sealed you can't replace the battery.

Well first of all there is a huge ammount of evidence that new iPhone is coming very soon. It will be announced on June 9th. About the battery though it will not just die for a long long time. And apple can replace it for you for $79

you shouldnt have to worry about the battery until well after the iPhone becomes outdated.

If you mean "dies", as in "what happens if I'm out and about and my battery dies?", this is one of those seven year old sticking points of Apple's: you are expected to manage your battery life, full stop. You ought to be able to get between 6-8 hours of full on, hard core, non-stop use at the minimum, so if this is your question, plan on needing to charge at the most every six hours assuming you're, literally, constantly talking, watching videos, or surfing the web. If you're not constantly doing these things, you'll be much better off (they rate it at 250 hours of battery life in standby mode).
If you mean as in when the battery stops holding a decent charge, you'll probably have either traded it in, sold it off, or just plain won't care if/when the battery's performance becomes unacceptable. As an example (different product but same battery technology), I'm still on my original battery in my 5/5.5G 60GB iPod that I got in Oct 2005. I even bought a replacement battery for it over a year ago but still have no reason to install it.
