does anyone have a list of carriers that work on a unlocked iphone?

I don't know that there's a comprehensive list anywhere, but the short answer is: "Any GSM carrier."
The iPhone is just a GSM phone, so it will technically work on any carrier that supports GSM. In the U.S., I believe that's pretty much exclusive to AT&T and T-Mobile, in Canada it's Rogers and Fido (which is owned by Rogers). In Europe it's pretty much every carrier, since they only use GSM over there.

You should remember, however, that the EDGE network is the only data network/type supported. If they don't support EDGE data, they don't support the current iPhone's data abilities.
Thats the problem in Australia. There is only one EDGE network over here - Telstra, and that is identical to AT&T's system in every respect except A) it covers here 98% of our small 20 million population, B) the network over here works and C) we don't have visual voicemail, obviously.
This is the price we pay for being such an advanced technology base. Australia, being very small in population/size density, is the perfect place for technology releases and testing, and as such, every provider over here is currently 3G (over practically ALL the population) and we are waiting for a half-decent iPhone to come out.
We love the iPhone OS. We love the iPhone beauty. We love Mr. Jobs.
We HATE the iPhone data speeds.
