The iPod touch will never, ever, ever use folders. None of the iPods out there use folders for browsing your music. The music is stored in a bunch of random folders on the iPod's internal storage but it doesn't use those folders as a browsing structure.
You can make video playlists right in iTunes though. So you can have a playlist for certain TV shows, certain music videos, and so on.

Well, you will never get a iPod if you are waiting for a folder structure type of organization. The iPod is not for you if you want that feature. You will need to look at other players like the Creative Zen or SanDisk line of players. None of the iPods use a folder structure organization and they never will, that is just not how the iPods work. iPods work by reading playlists (which can act as folders so I don't see what the big deal is) and read the track tag information for audio and video files.

hello kornchild....
i am not wanting to get an ipod touch....I ALREADY HAVE ONE!
all i am stating....is that it would be nice if videos could be arranged like you do for photos. you know. when you upload pics (from different locations / folders on your pc) thru itunes to the touch, they do appear like FOLDERS on the touch. for someone with as many posts as yourself, i thought you would know this.

Maybe this is not exactly what you´re looking for but I thought it's worth mentioning.
If you have several videos and tag them all with the same TV Show name they will be organised in a way that you will see them as they all were stored in a folder...
What I mean is that when you select Video on your iPod you'll see just one entry for your TV Show containing N episodes.
Maybe you already knew that or maybe is not what you're looking for.....

Just to be clear, I think the OP is asking for a layered menu of organization (sub-categories, if you will), rather than folder-based organization a-la a file system.
The iPod classic and iPod nano (with video) do provide a folder organization in this sense of the word... Videos can be organized into playlists, and on the music side, nested playlist folders are now also supported.
Unfortunately, this feature has not made it to the iPod touch or iPhone at this point. Videos are organized pretty much as you see them -- all on one listing with category headings. Note that TV shows and podcasts will be organized into a sub-category for each show/podcast where you have three or more of the a given TV show or podcast series on the device.
Music on the iPod touch supports playlists in the same way that older iPod models always have, but playlist folders are not supported on the device itself -- all playlists are shown at the same level.

i am also organizing my videos under TV SHOWS. Just wondering is there a way to make the videos play continuously one after another instead of stopping at the end and going back to the menu?
Thanks

At the risk of sounding like a broken record, make a playlist.
