Hello
what happens if you have a a jail broken iTouch, and iTunes automatically does a firmware upgrade when it comes available ?
will the iTouch revert to the a non-jailbroken iPod ?

The way Apple has setup the firmware upgrades for the iPod Touch, the entire partition where the firmware/operating system/applications are stored is wiped and replaced with the new firmware. That's why even small upgrades to the firmware run over 150MB - it's the entire file, not just small changes.
It should revert to non-jailbroken, but you may actually have files left over (if you've moved your applications). It can be kind of messy, but a force restore should wipe everything to the default, unjailbroken firmware.
Your firmware NEVER autoupdates. iTunes is programmed to let you know, and ask permission. This is for security reasons.
If you want to upgrade, it just use the restore function, as this will wipe the iPod.
If you restore it will remove the jailbreak.
Make sure if you want to keep a jailbreak on it, your jailbreaking source has mastered the new OS, and use the restore function for safety. This is why I always recommend syncing from a playlist, and always keeping a copy of your Music on your computer.

Hello,
so do I understand this correctly... ? so if Apple tells me there is a new firmware available, I should not upgrade. If I do, I will lose the jailbreak on the iTouch then ( ? )
This is what I understand.
