... or any of the other 'native' software that Apple have so kindly pre-installed for us? Things like Stocks, Notes and something that I installed called SIMport...

I believe you can SSH into your ipod and delete. Or, use a 3rd party app and hide the icon. I use Boss Prefs.

I am sorry, I had a brain fart!! I told you the wrong program to hide the icons. The program you need is Customize. Just be carefull not to hide the "Customize" icon. PS: Boss Prefs is still a great tool to have.

If you only want to hide icons then "Poof" is better.
additionally, I don't think customize works on 1.1.4, does it?

I've used Poof! now. I'd still prefer to uninstall the apps though, if anyone knows how?

SSH stands for secure shell. Its a way to access the iPhone files. You use a client like PuTTY to handle the data transfer. I think...LOL. I know BlackWolf is good with that kinda stuff, so he can give you the technicals of it all.

I just move my Stocks app to a different home screen. Why do you need to uninstall it completely? I doubt it takes up to much drive space, plus it will probably be added again every time you update it.
