When on the Edge network and you run the Mail (Icon such as gmail)... does it use your Unlimited Data Plan or some other hidden fee/feature?

It uses data, and be covered under your unlimited plan.

just FYI: if you have an unlimited data plan, you never have to worry about these things. accessing edge or gprs always works the same way, there are no such things as "hidden fees" with this.
the only way you could ever pay for internet when you have an unlimited data plan is either roaming (so accessing the internet from a foreign country) or if you connect to a wireless hotspot that costs money. in that case you have to register anyway and you'll KNOW that it costs money. so don't worry ...
