Now that SDK got delayed I just want to jailbreak my iPod touch.

If I use ZiPhone for a week or 3 and later restore, will still have my $20 apps?

If Ziphone makes my iPod enter codes endlessly, can I just put it in recovery mode and restore to fix it?

has it been oficial when the SDK will be released? Or that it is even postponed?!

Yes, you can force restore.

Yes, you'll lose your apps (unless you follow the tutorials somewhere on the site of how to save them.)

From what I've been told, no official date as given for the SDK release but Steven Jobs said it would be released at the end of February, and many people speculated it would be announced the last Tuesday of the month since everything seems to be released on a Tuesday. A Buisness Week source brought a rumor out a few days ago that the SDK was being delayed 1-3 weeks. People have also told me that Apple announces to the media 1-2 weeks when they will have an event, and that has not happened.

I don't own an ipod touch yet, but from what I've read on the forum, when you buy the $20 dollar apps from iTunes, the apps are tied to your itunes account so even when you force a restore you should still have those apps.

Agreed - the applications are tied to your iTunes account.

And any issues should be fixed by putting it in recovery mode and restoring to the factory defaults.

Of course you've waited this long - wait until after today (Tuesday) to make sure Apple doesn't throw something out the door...
