I know how to check how many minutes ive used, is there a way to see how many text messages have been sent or received from my iPhone?

It would say on your bill wouldn't it? If it doesn't say on the paper one it will almost certainly say on the online bill.
You can't check from the phone directly. Well, you can. By logging into your AT&T account online via Safari and checking your usage there. The phone itself doesn't keep statistics of text messages.
