I am curoius to know, if you remove the SIM card from the iphone (I know the phone part won't work), but can you still use Safari in Wifi and the video and music portions of the iPhone?

Yes, everything will still work, the phone will say no sim at the top instead of AT&T. Just don't turn off the iPhone.

It doesn't matter if you turn it off or not. If you turn it off, and then on again you'll just get a message saying no sim found, that's it.

I meant do not reboot.

Hope this is a related question. Without a SIM card, will the built-in camera still work?

There's no reason why it shouldn't.

Thanks for the confirmation! I thought I'd double-check.

Everything works without the sim card except the phone feature. Internet/email/weather... will need a wifi.
