Under "Usage" in settings, there is a category for "edge network data", sent & received.

Do the totals include GPRS data or is it purely Edge only? If te latter, where can I find figures for GPRS data usage?

The totals include ALL data used over the cellular network. The only thing excluded is WiFi data usage.

The only difference between GRPS and EDGE is the speed... The same cellular radio and technology is used in the iPhone, and the visual indicator is just to let you know what kind of speed to expect. Since the data is travelling out the same way, it's therefore tracked in the same way, both by the iPhone and by most carriers (ie, the data charges for GPRS or EDGE are the same, since you're paying for the amount of data transferred not merely the time online, so the speed of the connection doesn't really matter).

For all intents and purposes, the iPhone is an EDGE device, and most carriers promote EDGE data services. GPRS is just a fall-back for when you can't get an EDGE connection, and isn't really offered as a separate service level.
