My iTunes library has complete artwork but the albums on my actual iPod is missing loads and I don't know how to fix this. Can anyone please help?

There is a general setting in iTunes when you have the iPod connected (I think on the Music tab?) This setting is what tells iTunes whether or not to load artwork onto your iPod.
Do you auto-sync your iPod? If so, then all you need to do is enable that setting and re-sync your iPod. If you manually-manage the iPod's contents, you're better off erasing and re-loading its contents (as opposed to adding artwork to the songs on the iPod directly).

I think (don't quote me) that in iTunes on your computer, the cover in one song on an album gives it to all the songs in the album. On your iPod Touch, however, you need the cover on each song. Trying to remember the best way to add it to all the songs... I think you best bet is to save the image to your desktop, select the entire album in iTunes, hit CTRL-I (CMD-I on Mac) and drop the artwork into the box at the right and hit apply/ok. Should add it to all of them...

Well my iPod was displaying only some album covers not all. I do auto sync, but am trying to do a restore and resync everything. It did a timeout a little while ago during the sync and when I check my music everything seemed to be gonig well all albums were covered. I restarted the sync and hope it continues and finishes ok.

Restoring your iPod will probably fix the problem, assuming that your library is fully populated with artwork.
One thing you could have tried (which I failed to mention) is that if you auto-sync you can disable the artwork setting in iTunes, re-sync, then re-enable the artwork setting, and re-sync again. This forces the iPod to rebuild the artwork index that can get out of whack (usually happens when you do a lot of artwork additions to your library).
